Our story
The New Wave Brasserie & Bar was a long-held dream of Tim Boyd, who has run a seafood business supplying the finest restaurants in the Cotswolds and beyond for nearly 35 years.
In 2019, Tim shared his vision of setting up a seafood restaurant with award-winning chef and former restaurant owner, Bob Parkinson (Swan at Southrop, Barnsley House, Made by Bob). They both decided to join forces and become business partners – a match that perfectly combined Tim’s extensive knowledge of fish and shellfish with Bob’s culinary expertise. Together with Tim’s wife Maisie Boyd, who had a wealth of experience in the hospitality industry in the US, Tim and Bob set out to explore and experience the vibrant seafood scenes in many cities around the world, including New Orleans, Paris and New York. They returned to the UK fired up and determined to set up the seafood restaurant that Tim had always dreamt of.
Making the vision a reality
The trio searched high and low for the ideal site for their new restaurant. They knew they wanted to be in the heart of the Cotswolds, ideally in Lechlade, which Tim and Maisie had recently made their new home. Then a miracle happened – a café and former bakery located in a characterful old building on Lechlade High Street came on the market. Given it already had a team of friendly, well-trained staff who were happy to work for the new seafood brasserie (including our great front-of-house crew, Jess, Nicky and Sam), it could not have been more ideal. In October 2022, the dream was realised, and New Wave Seafood Brasserie & Bar was born.

In 2023, the highly talented Nico Arnold joined the team as Head Chef. He has always had a genuine passion for seafood, and creates great menus that combine his signature dishes with daily specials, depending on the best-quality catch and what the fisherman have landed. The New Wave Brasserie & Bar is delighted to have him on board.
